I made these pear muffins the other day and they were soooooo good , highly recommend this recipe if y'all want a decently nutritious snack. I made them vegan so I replaced the egg with ground flaxseeds and used almond milk

Instead of doing the butter crumb topping I just tossed some shredded coconut and pumpkin seeds with sugar and sprinkled it on top before baking

I made banana muffins. Half chocolate chip, half cinnamon. I've been eating one every like 2 hours.

One of my newly acquired skills during the pandemic has been making my own Chinese hand-pulled noodles. I follow this recipe, which is completely vegan unless you add an egg.
