The reason shire isn't pronounced shyer is because (I'm pretty sure) it predates the Great vowel Shift, where in this case what would be the silent e has no effect. Museé is not pronounced moosay, the u in French is pronounced like ee (in English) but with your lips rounded. It's really hard to do. And then the s is pronounced like a z So Museé du Louvre is extremely difficult, because in addition to the two u's, you have the re, which is done as a slight hack in the back of your throat, like you're swallowing the r.
